Champagne Binon Coquard
The Binon-Coquard champagne is first and foremost a family of winemakers living in Spoy for several generations. They elaborate their wines from the finest assemblages of their parcels.
Maxime and Cyrielle, the generation at the controls, combine technologies, user-friendliness, audacity and taste for novelty, while remaining attached to ancestral values. They do all the work; from the vineyard to the marketing, through the vinification.
The 6.5-hectare vineyard extends over several communes south of Troyes: Spoy, Meurville and
Champignol lez Mondeville. The soils are clay-limestone on Kimmeridgian, which gives all its typicity to Pinot Noir, grape majority on the field (70%). These winemakers also grow Pinot Meunier (20%) and Chardonnay (10%), the other two Champagne grape varieties.
